Episode 306 - Number One Mom!
Special Mayonnaise
In preparation for a Mother's Day brunch extravaganza, a dollop of dill mayonnaise is the perfect topping for our entree of choice: Chilled Poached Salmon. This meal sure does save some time as you can prepare it a few hours before your guests arrive. It is important to keep in mind that the trick to making a really good mayonnaise is to take your time. Here's our recipe for a 'dill-icious' mayonnaise that Mom won't soon forget.

  • 2 egg yolks
  • tsp dry mustard
  • tsp salt
  • juice of lemon
  • tsp sugar
  • cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • cup chopped dill


Blend egg yolks using a hand mixer until lemon coloured. Add in mustard, salt, tsp lemon juice and sugar. Continue to blend, adding olive oil, tsp at a time. *Do this very slowly.

In a separate mixing bowl, add remaining lemon juice and vinegar. Pour cup sesame oil into another bowl. Add ingredients of each bowl, alternating, a few drops at a time. Once all of the ingredients are mixed, fold in the dill, and refrigerate until served.

*Remember to always keep mayonnaise refrigerated.
