In thinking about what to do for a graduation party, why not whip up some quick and easy finger sandwiches? Elaine Wong of the King Edward Hotel, has some great recipes. Elaine has a few suggestions for the classic Chicken Waldorf sandwich.
- 1 poached chicken breast, finely chopped
- 2 ribs celery, finely chopped
- 1 Granny Smith apple, finely chopped
- ¼ cup walnuts (you can use any kind of nuts)
- ¼ cup grapes, sliced
- ¼ cup sundried cranberries
- ¼ cup mayonnaise
- 2 tbsp. Butter
Mix all of the ingredients together in a bowl.
Spread a thin layer of butter on one side of the bread. (*Elaine calls this the "glue" as it binds the filling to the bread. You can also use mayonnaise or cream cheese).
Add the filling. (*Just use a little bit of filling, because the bread is so thin).
Butter the other slice of bread. Place it on top of the filling as you would any sandwich and compress the sandwich lightly.
Cut the crusts off the ends (*finger sandwiches should always be crustless).
Cut into finger sized shapes.
You can also cut into square-shapes, as well as triangles or you can even use cutters to create different shapes.
*Elaine pointed out that part of the beauty of finger sandwiches lies in your selection of bread. She recommends using a whole loaf of bread, sliced paper-thin to create these small, delicate sandwiches.
