Episode 403 - Burgers 'n Brew
Chicken and Veal Burgers
Quick and delicious...
Let me throw a scenario at you: you're on the phone talking with a close friend and suddenly, out of nowhere, you say something like "why don't you come on over for dinner tonight?". You hang up the phone and think: what did I just do? Well, don't you worry, this episode is all about some really great recipes for hearty food that is quick and easy!

Although the ingredients vary between the chicken burger and the veal burger, the methods are the same.

The first recipe is for Chicken Burgers (makes 4 burgers):

  • 1 lb. ground chicken
  • 1/2 red pepper, finely chopped
  • 1 tsp. chives, finely chopped
  • 1/2 sweet onion, finely chopped
  • 1/4 cup bread crumbs (can use white or whole wheat)
  • 1 clove garlic, crushed
  • 1 egg
  • 1 tsp. Dijon mustard
The second recipe is for Veal Burgers (makes 4 burgers):

  • 1 lb. ground veal
  • 1 tsp. Curried powder
  • Worcestershire sauce
  • 1/2 cup bread crumbs
  • 1 tsp. lemon rind, grated
  • 1/2 cup sweet red onion, chopped
  • pinch of salt
  • 1 tsp. sage, chopped
  • 1 egg
Method (for both recipes):

Add all ingredients together in a medium-size mixing bowl. Mix together with hands until it is well blended. Divide meat into 4 equal size portions. Form into ball and then flatten. Transfer onto wire rack and place on top of pan (allows them to cook evenly and for the fat to drip down). Put on top rack of oven and broil until cooked to desired doneness.

**As an alternative, you can barbecue the burgers in the same fashion.
