Gelatin Surprise
An old favourite...
Time for a classic recipe using a favourite flea market find. Inspired by a vintage gelatin mold, here's how to turn it into a delectable collectible.

An old-time dessert with a new twist: Gelatin Surprise!

  • 7/8 cup of water
  • 7/8 cup of pineapple juice (*you can use grape, apple, or any juice you'd like)
  • 1/2 tsp salt
  • 1 package lime flavoured gelatin
  • 1/2 cup carrots, grated
  • 1/2 cup crushed pineapple (*you can experiment with different fruits)
  • 1/2 cup mandarins
  • 1/2 cup pistachios, chopped

In a medium-sized saucepan, heat water and pineapple juice. Add salt, stir, and allow to boil. Once the mixture is boiling, turn off the stove. Add gelatin and allow to dissolve into the mixture. Remove from the stove and place into refrigerator until it is almost set.

*Two things to be careful of when using gelatin: 1) never bring it to a boil; 2) never place this mixture in the freezer in an attempt to speed up the cooling process, as it will destroy your recipe. Remove from refrigerator (it should still be loose and runny).

Add remaining ingredients. Stir well, making sure all of the ingredients are incorporated into the gelatin. Run mold under cold water and transfer mixture into it, filling it right up to the top. Chill until well firmed (at least 2 hours). For a larger Gelatin Surprise, leave in the refrigerator to set for 4 hours.

Remove the mold from the refrigerator and place it into a bowl of hot water for a few moments. Invert a cake stand on top of the mold and then flip it over, listening for the sound of the gelatin breaking away from the mold. Lift mold off of the gelatin to reveal your perfect Gelatin Surprise.

Present with a garnish of greens.
