Warming Up...
Busy planning that wedding and have no time to sit down for a meal? Absolutely! A test meal is extremely important when you're determining the wedding dinner.

Our caterer Lindsey Shaw of Lindsey Shaw Catering shared with me some of her menu options for a wedding at home. The idea is to plan a menu which is easy to prepare and serve, tempting to look at, and, of course, tasty!

For hors d'oeuvres, Lindsey prepared a delectable selection. First, I tried some mini pitas stuffed with smoked chicken breast, nectarines, and red oak lettuce with pecan mustard. Next, were the sea scallops, seared with an avocado and corn relish. Finally, I sampled the mascarpone croustinis with yellow pear tomato slices.

With respect to quantities, Lindsey suggests that if you have a typical, two-hour cocktail reception, you should be offering between 8 and 10 hors d'oeuvres per person. As well, you should probably have a fifty-fifty combination of both hot and cold items.

Bite-sized and tasty, Lindsey presents our treats on an hors d'oeuvres tray along with a cranberry, rosemary and herb garnish. The taste? As magnificent as the presentation.
