Episode 101 - Clambake
Serves six to eight
Delicious Coleslaw
This spectacular vegetable slaw is the perfect accompaniment to Savoir Faire's clambake, but it's also a tasty, crunchy and colourful salad addition to any backyard barbecue, picnic or potluck party.

  • 1/2 large head of red cabbage (approximately 3 cups when grated)
  • 1/2 large head of green cabbage (approximately 3 cups when grated)
  • 4 large carrots (approximately 2 cups when grated)

  • Finely grate cabbages and carrots. (Grating on an angle creates a thinner, softer slaw.)
  • Combine in a serving bowl. (If setting aside, cover with a damp cloth)

  • 4 tbsp low fat yoghurt
  • 1/2 cup rice vinegar
  • 1/4 cup of sesame oil
  • 1/4 cup of finely chopped fresh mint
  • 1 tbsp paprika
  • salt and pepper to taste

  • Combine all ingredients, in order, in a one pint jar. Shake vigorously. Pour onto coleslaw just before serving.
  • Keep coleslaw covered and refrigerated if not serving immediately
