A picnic, or Pik Nik, is the perfect excuse for preparing this gigantic,
delicious submarine sandwich. This particular one includes several
types of cold meats. Feel free to substitute your favourite vegetables
if you wish. Accompanied by delicious, fresh salad and dessert and
you’ve got the recipe for a perfect day in the park!

Ingredients (Serves
6 to 8)
- 1 large, sesame-seed baguette
- ˝ lb. sliced turkey breast
- ˝ lb. Italian cappicollo
- ˝ lb. veal and pimento loaf
- 2 beefsteak tomatoes
- ˝ lb. smoked Gouda cheese
- ˝ lb. havarti cheese
- 1 head of red leaf lettuce Pommery Mustard
- 1 jar cocktail olives
- 1 jar gherkins
After slicing the baguette in half lengthwise, spread Pommery mustard
on the bottom half. Then begin layering the meats, cheeses and vegetables
so that you create an attractive colour combination. Make sure to
fold some of the meats; this will give your submarine added height
and presence. Now, spear olives, onions and gherkins onto eight
cocktail toothpicks and insert them into the sandwich.
Slice the submarine sandwich on an angle creating attractive pieces
for each guest. Garnish with radishes and carrot sticks. Ship ahoy!
As added accompaniment to these wonderful sandwiches you may wish
to include a braised fennel and celery root salad. For dessert,
how about fresh-baked lemon tarts. |
