Looking for some
cool drinks for hot midsummer afternoons or evenings? Here are a
couple of refreshing recipes for flavourful coolers:
Cucumber Dream Cooler (left):
Ingredients:
- ice
- English
cucumber, peeled, sliced
- 12 oz.
lime juice (can use lime powder)
- pinch of
fresh spearmint, chopped (can use peppermint)
- 2 tbsps
low-fat yogurt
- pinch of
salt
- pinch of
lemon zest
- lemon slice
- cucumber
slice
Method:
Into a blender, add ice, cucumber, spearmint, yogurt, salt,
lemon zest, and lime juice (*if you want to fresh-squeeze your
juice, use a smaller quantity or it will be too tart).
Place lid on top, and blend.
Pour into tall sling glasses and garnish with a slice of lemon
and cucumber (*use a zester, and draw up the cucumber and lemon
to give it a striped pattern).
Add a yellow straw and a sprig of mint.
Mouth Water Melon Cooler (right):
Ingredients:
- ice
- 1 cup watermelon,
chopped
- 1 cup honeydew,
chopped
- 1 cup cantaloupe,
chopped
- 1 cup fresh-squeezed
orange juice
- 12 oz.
mint tea, brewed then chilled
- melon balls
Method:
Into a blender, add ice, watermelon, honeydew, cantaloupe, orange
juice and mint tea.
Place lid on top and blend.
Pour into sling glasses, leaving a bit of room at the top.
Add melon balls.
Garnish with a piece of watermelon and a straw.
Whether you're
in a mellow, melon mood, or wanting to feel cool as a cucumber,
on a hot summer afternoon, coolers are the way to go.
