Cookie Bake Off - Rosa's Chocolate Chip Biscotti |

Looking for a
traditional biscotti recipe with a twist? Well, Rosa Rotstein has
a recipe that will satisfy that craving.
Ingredients:
- 1 ¾
cups flour
- 1 tsp baking
powder
- ¾
cup toasted almonds
- ½
cup chocolate chips
- ¾
cup sugar
- 2 eggs
- 1 stick
of butter, melted and cooled
- 1 tsp orange
zest
- 1 tsp vanilla
extract
Method:
In a bowl, mix four, baking powder, almonds, and chocolate
chips. Stir.
In another bowl, add sugar, eggs, butter, orange zest, and vanilla
extract. Stir.
Add dry ingredients to wet ingredients a bit at a time. Stir.
Dust cutting board with flour, putting some on your fingers so
they are not sticky.
Roll dough into two logs, pinching them in the middle, then rolling
them out like a snake. (*Traditional biscotti are large, but you
can make them smaller to yield more cookies).
Brush cookies with egg whites.
Place on a baking sheet and bake in oven for 20 minutes at 325
degrees.
Remove from oven, allow to cool, slice them up, and then put back
in oven.
Bake at 325 degrees for 20 more minutes.
Remove from oven.
So delicious,
and so simple to make. The only challenge will be seeing if you
can resist eating them all up before your guests arrive!
