| In cleaning out the kitchen cupboards and
the fridge it's surprising the tasty dishes you can
create using a little imagination. I like to call them
"rightunders" as opposed to leftovers, as
you're preparing these recipes using items found right
under your nose. My friend Nancy, a fitness guru, and
I got together to come up with a few dishes that are
innovative, healthy and most of all, yummy!
Tuna Salad Sandwich
Ingredients:
- 4 cans of tuna
- Mayonnaise
- Ccelery, finely chopped
- Bread
Method:
Add mayonnaise to tuna, then add celery. Mix together
thoroughly.
Hummus
Ingredients:
- 2 cups chickpeas
- 2-3 garlic cloves, chopped
- Parsley, chopped
- 2/3 cup black olives, pitted
- 3/4 cup lemon juice
- Tahini
- Salt
Method:
Add garlic, parsley, black olives, lemon juice, and tahini
to a bowl. Whip it together, adding salt.
**For an interesting mix, add the hummus to the tuna
salad sandwich and enjoy!
Green Bean Soup
Ingredients:
- green beans
- 2 cloves garlic, crushed
- White onion, chopped
- Extra virgin olive oil
- 2 tbsps paprika
- Sour cream
- Lemon juice
- Salt
- Fresh dill, chopped
Method:
Clean the beans, snapping the ends off of both sides,
then cutting them in half.
Add a bit of olive oil to a medium-sized saucepan, and
turn the stove onto medium-high. Add the onion and crushed
garlic, sauteing until they become translucent.
Add green beans and paprika, and stir for about 5 minutes.
Add water to cover the beans.
Add the sour cream, lemon juice, salt, and dill.
Continue to simmer until the green beans are tender.
