Hors d'oeuvres For Two |

That
special someone is coming over for dinner, now what?! Here
are a few simple suggestions for hors d'oeuvres for two that should
help to whet your appetites for what's to come (dinner, that is).

Vegetable Caviar in Mini Pitas

Ingredients (Makes
12 mini pitas)
- 1 green pepper
- 1 red pepper
- 1 baby eggplant
- 1 Spanish onion
- 2 tbsp chopped sun dried tomato
- 2 tbsp yoghurt
- 2 tbsp chopped fresh basil
- 2 tbsp chopped oregano
- 2 tbsp chopped green olives
- 2 tbsp chopped black olives
- Salt
- Pepper
Grill the green pepper, red pepper, baby eggplant and Spanish onion.
Peel the skins from these vegetables and loosely chop them. Place
into a bowl and stir in add the yogurt, finely chopped sun dried
tomato, fresh basil, fresh oregano, green olive and black olive.
Add salt and pepper to taste. Blend these ingredients so that vegetable
caviar has the consistency of a dip. Cut the tops off of 12 mini
pitas. Carefully open the top the pitas and spoon the caviar into
the pockets. Garnish with a small basil leaf.

Ingredients
- 8 oz dry cottage cheese
- ½ pound salted butter
- 2 cups all purpose flour
- 1/4 cup crumbled Asiago cheese
- 1/4 teaspoon curry powder
Preheat oven to 400-degrees. Rub the butter with the flour. Add
the dried cottage cheese and the Asiago cheese. Add the curry powder.
Work the mixture into a dough and roll it out onto a floured board,
to a thickness of 1/4 inch. Take a small glass or cookie cutter
and form the dough into small wafers. Lay onto an ungreased baking
sheet. Bake for approximately 15 minutes, or until golden brown.
Cool for two minutes, then enjoy. |
