Coleslaw
Serves six to eight |

This spectacular vegetable slaw is the perfect accompaniment to
Savoir Faire's clambake, but it's also a tasty, crunchy and colourful
salad addition to any backyard barbecue, picnic or potluck party.

Ingredients
- 1/2 large head of red cabbage (approximately 3 cups when grated)
- 1/2 large head of green cabbage (approximately 3 cups when
grated)
- 4 large carrots (approximately 2 cups when grated)
Method
- Finely grate cabbages and carrots. (Grating on an angle creates
a thinner, softer slaw.)
- Combine in a serving bowl. (If setting aside, cover with a
damp cloth)

Dressing
Ingredients
- 4 tbsp low fat yoghurt
- 1/2 cup rice vinegar
- 1/4 cup of sesame oil
- 1/4 cup of finely chopped fresh mint
- 1 tbsp paprika
- salt and pepper to taste
Method
- Combine all ingredients, in order, in a one pint jar. Shake
vigorously. Pour onto coleslaw just before serving.
- Keep coleslaw covered and refrigerated if not serving immediately
