Although usually served in small bites, food for a High Tea is just
as important as the event itself, if not more! My friend Lindsey
Shaw, a caterer, has very exact standards when it comes to food
for this special event. For her smoked duck breast on wild rice
pancakes, she incorporates cooked wild rice into silver dollar-sized
pancakes. Lindsey even confessed that she often uses a simple pancake
mix to simplify the process.
Lindsey tops the pancakes with slices of smoked duck breast, chopped
chives and black sesame seeds. Here’s an option: substitute any
type of smoked meat for the duck. Just as delicious!
