Pavlova! |

Something sweet is usually in order for a high tea. Onto small pavlovas,
made of egg whites and sugar, my friend Lindsey Shaw places a small
dab of whipped cream with a hint of maple syrup.
Then she adds a few small in-season berries, like blueberries or
raspberries. You may wish to add tiny slices of kiwi fruit or sliced
cherries. Colour is everything! Then our pavlovas are touched off
with a hint of mint and a dusting of confectioner’s sugar. One word
of caution: make a lot of them as they’ll be very popular!
