Storing Vegetables |

Wash all vegetables. Romaine lettuce may be broken apart gently,
layered in a rectangular container that has been lined with a tea
towel which is then folded on top of the leaves and stored with
the lid on - ready for quick access for that BLT or Caesar salad
later in the week. Leave the bib lettuces in tact until use, or
store in a special, air tight lettuce container designed with a
small water holder which allows lettuce to drink. Trim radish leaves
and their bottoms and store in a water filled container. Radishes
may be cut in star or flower shapes which will open during their
immersion in water. Trim asparagus bottoms and also immerse in water.
Never store potatoes and onions in the refrigerator: they should
be stored in a cool, dry environment, like a cupboard. |
